Thanksgiving Vegetarian Recipes

Just because the turkey sits at the center of the table doesn’t mean a vegetarian can’t enjoy a satisfying Thanksgiving meal. In fact, between buttery mashed potatoes, flaky homemade dinner rolls, and an assortment of raw and roasted veggies, the vegetarian side dishes are often the star of the meal. Even the items that are typically only enjoyed by meat-eaters can be easily tweaked to accommodate vegetarians, from the gravy (our veggie-friendly version is flavored with umami-rich mushrooms, caramelized onions, and soy sauce) to the stuffing (packed with apples, celery, and lots of fresh herbs). Or, as an alternative to turkey, consider making a hearty Butternut Squash and Kale Lasagna, which can be prepped and assembled the day before. Other popular vegetarian dishes, such as fresh salads filled with in-season produce, sweet potatoes, corn bread, and more, naturally fit into any Thanksgiving meal. Even turkey-lovers will appreciate the assortment of produce-centric sides.
